Why practice with numbers? The ServSafe exams are rule-heavy: temperatures, times and hygiene standards come up again and again. Memorising the key figures — the danger zone (41°F–135°F), the four-hour limit, minimum cooking temperatures and handwashing time — covers a large share of the scored questions.
