Why practice with numbers? The ServSafe exams are rule-heavy: temperatures, times and hygiene standards come up again and again. Memorising the key figures — the danger zone (41°F–135°F), the four-hour limit, minimum cooking temperatures and handwashing time — covers a large share of the scored questions. It depends on your state and job. California, Texas, Florida, Nevada, Arizona, Illinois and others require food workers to hold an accredited food handler card — check your state health department.

Is this the same as the Manager test?

No — the Manager exam covers broader management topics (HACCP, facility, purchasing). This page focuses on the food handler basics your card exam tests.

How long should I wash my hands?

At least 20 seconds with warm water and soap, then rinse and dry — before handling food and after restroom, raw food, or any contamination.

What happens if I'm sick?
